Chemical Analysis

Using our network of certified laboratories, Coffee Intelligence is fully capable of testing for the presence or absence of several compounds commonly found coffee. We currently offer the following sets of chemical tests for both green and roasted coffee:

 

Caffeine - or 1,3,7 - trimethylxathine is a commonly found alkaloid present at concentration between 1.2%-2.2% on average, depending on the coffee species. In its pure state caffeine, exists as a white powdered alkaloid with an intensely bitter taste. Caffeine acts as a stimulant for the central nervous system (CNS) having the temporary effect of warding off sleep and restoring alertness in both humans and animals.

Typical Testing Applications - determining residual caffeine levels in decaf samples, analyzing caffeine content across various blends, comparing caffeine levels in various roast levels,  comparing caffeine content in coffee to other food products.

 

 

Trigonelline -  readily decomposes at 320oF  to produce a large class of important aromatic compounds called pyridines - typically associated with sweet/caramely/earthy-like aromas. Since trigonelline is an alkaloid it slightly contributes to coffee's overall bitterness, but plays a much greater role in developing coffee's overall flavor profile.

Typical Testing Applications - comparing competitors roast profiles, and assesing flavor in blends. 

 

 

                                          Organic Acids - represent a large and important set of compounds found in coffee. Our organic acid profile test can determine relative levels of commonly found acids in brewed coffee. According to flavor studies, acids play a significant role in perceived acidity and overall flavor profiles of coffee, with levels differing due to processing type (wet/dry/semi), roast level, and preparation method.

Typical Testing Application - comparing specific lot profiles, and comparing flavor profiles based on different roasting technologies (drum/fluid bed). 

 

Pricing

Chemical tests require 10-14 business days for results with fees typically based on the number of tests per sample and frequency of testing.
